Baking ideas for Father’s Day

With Father’s Day fast approaching (June 20th, just as a reminder!), it’s fair to say that most Dads will be over the moon with whatever their cherubs present them with (too early) on a Sunday morning. But what if you’re looking to make this year’s celebration a little more special?

This month’s blog is all about DIY baking for the special Dad in your life. I’ve dug out some of my favourite recipes and challenge you to bake something yummy for Dad next week.

Let’s dive straight in!

Using Dad’s favourite ingredients

Father’s Day is all about spoiling the special man in your life – and what better way of doing that than by choosing his favourite things to inspire your baking efforts? The recipes I’ve chosen this month are both based on the things I know that most Dads enjoy – beer and chocolate!

Mars Bar Cake

It’s a bit retro, but who doesn’t love a fantastic, gooey, moreish Mars Bar Cake? Every Dad loves Mars Bars so this is the perfect, no fuss bake to surprise him with. Simple to create, no baking required and they can be made as fancy or not as you like. Just have fun. Ingredients

100g Butter (unsalted, softened)
4 Mars bars (chopped)
1 1/2 tbsp golden syrup
150g Rice Krispies
350g Milk chocolate
50g White chocolate

Method

Lightly grease and line a 20cm (8”) square baking tin.

In a heatproof bowl, melt the butter, golden syrup and three of the chopped Mars Bars until they’re all runny and delicious. But don’t worry if the Mars Bars don’t fully melt – they do that sometimes…

Remove the melted stuff from the heat and stir in the Rice Krispies. You can also add in the remaining Mars Bar now too.

Press the mixture into the tin, firmly, making it all lovely and even.

Next, melt the milk chocolate over a gently simmering pan of water and stir it until it’s completely melted. This can then be poured over the Krispie Cake.

Moving fast before that sets, melt the white chocolate and drizzle it over the milk chocolate for decoration. If you want to be really fancy, use a skewer or toothpick to drag lines up and down to create a fun and funky design.

Leave the cake to set (you can leave it in the fridge if you want it really set) and remove from the pan before serving. Leaving it at room temperature for a while will make it easier to cut when you’re ready to devour it.

Guinness cupcakes

These deliciously moist cupcakes are sure to be a hit with every Dad or Grandad in the land. They do contain alcohol so they might not be for everyone – but he’ll love them, right?

Ingredients

200ml Guinness
50g cocoa powder
150g softened, unsalted butter
250g light brown soft sugar
2 large eggs, beaten
170g plain flour
1 tsp bicarbonate of soda
½ tsp baking powder

For the topping:

200g cream cheese
100g icing sugar, sifted
150ml double cream

Method

Get the oven preheated to 180˚C and prepare a 12-hole muffin tin with cupcake cases.

Slowly and carefully mix the Guinness into the cocoa powder until you’ve got a smooth and runny liquid. In a separate, large bowl mix the butter with the sugar until it’s pale and fluffy. Add the beaten eggs, a little bit at a time.

Add the Guinness mixture to the sugar, butter and eggs then sift in the flour, bicarb and baking powder. Add just a pinch of salt and gently mix it all together.

Spoon evenly into the cases and bake for 20-25 minutes. Check they’re cooked with a skewer (if it comes out clean, they’re done). Allow to cool on a rack.

While they’re cooling, make the ‘icing’. Beat the cream cheese and then fold in the icing sugar (it’s best to sift this in as it’s all a bit lumpy at the moment). In another bowl, whip the cream to soft peaks then fold the two mixtures together.

Once cooked, top each cake with the icing – you can either pipe it on like a pro or simply dollop it on and arrange it as you’d like. Dad will love it, either way.
